little bits of happy: May 21, 2007

...a full tummy after a delicious dinner.

Sauteed Fish with Tropical Salsa

1 pound tropical fruit salad (fresh pineapple, strawberries, kiwi)
1/2 cup grape tomatoes, rinsed
8-10 sprigs fresh cilantro, rinsed
1 tablespoon balsamic vinegar
1 1/2 pounds snapper fillets (thawed if needed)
1/2 teaspoon seasoned pepper blend
cooking spray

1. Prepare salsa by cutting fruit into small pieces. Cut tomatoes into halves or quarters. Place both in medium bowl. Chop cilantro finely (2 tablespoons); add to fruit. Stir in balsamic vinegar until blended.
2. Preheat large saute pan on medium-high 2–3 minutes. Season both sides of fish with seasoned pepper. Coat pan with cooking spray; add fish (darker side up). Wash hands. Cook 2–3 minutes on each side or until fish is opaque and separates easily with a fork. Serve fish with fruit salsa.

LOL love the "wash hands" bit ;-)

This sounds good, I'll give it a try!

This looks so, SO good! I'll have to see if I have any snapper or something else I could sub. Did you buy fruit already done or just cut all those up?
Your presentation is beautiful!
