National Sandwich Day

yep you read that right. not another obscure "Hallmark holiday" but a *great* excuse to make the easiest dinner!! ;-)

inhonor of this i'll share a quick & yummy recipe for warm & toasty sandwich perfect for a quick November dinner:

Three-Cheese Meatball Heroes

16 frozen or fresh, fully-cooked meatballs
1 (15 1/2 oz) jar of marinara sauce
1/2 cup sun-dried tomatp pesto or basil pesto
4 hero rolls, cut in half & toasted
4 tbsp grated parmesan cheese
4 oz sliced or shredded provolone cheese
4 oz sliced or shredded fontina cheese

1. Heat oven to 400*F. If using frozen meatballs, cook according to package directions.

2. Meanwhile, in a medium saucepan, heat the marinara sauce and the cooked meatballs over medium heat, stirring frequently until sauce is thickened and hot, 5 to 6 minutes.

3. Spread 1 tbsp of the pesto sauce on bottom half of each roll. Place 4 meatballs on each roll. Spoon marinara sauce on top of meatballs, dividing evenly. Sprinkle each with a tbsp of parmesan cheese. Top each with 1oz provolone and 1oz fontina cheese. Place heroes on a baking sheet; bake 4 to 5 minutes or until hot and cheeses are melted. Serve with a tossed salad.

Serves 4.
tip: Look for fully-cooked meatballs in the deli section of your local supermarket.

omg.. I am totally going to make this for dinner. I was just thinking what can I make that is different, tasty and not going to comsume my entire evening. super great timing.
