Menu Plan Monday: October 18, 2010
Monday: (new recipe!) Troy found a new chicken recipe he wants to try. We'll be having it with a side of broccoli & a salad.
Tuesday: Burgers on the grill and Troy's creamy cucumbers. (story: We each have a recipe for a creamy cucumber salad. They are both really yummy. We trade off turns making them.)
Wednesday: (new recipe!) Pasta with Tomatoes, Spinach & Goat Cheese.
Thursday: Tuna casserole.
Friday: Pork chops, boiled potatoes & steamed Summer squash.
Saturday: Food & Wine Fest at Epcot.
Sunday: Leftovers?
Stayed right on task with this week's menu. The only elaborations are: I added the recipe for the Pumpkin Chili, which was so delicious! You would not have even known the pumpkin was there, it was so subtle. Friday's birthday dinner was at Bonefish Grill--I cannot resist their bacon-wrapped scallops! And I actually had no leftovers on Sunday (that almost never happens!) so I tried out a second new "recipe" (I feel funny calling it that because it was zero effort) for a Turkey, Mozzarella and Basil Wrap. Basil is my weakness & I am always drawn into recipes that list it as an ingredient. This was very simple & very tasty & totally hit the spot.
